Some of you have noticed that there haven't been many recipes posted of late. Yep. That's my bad. Poor T and I have been scrambling for "real meals" for the past few weeks. Typically we eat a lot of fresh fruits and vegis... and we had neglected to go to the store for a while... so that means our fridge was pretty bare. Our go-to meals like sandwiches and salads weren't even an option. But, whatdoyaknow, if you starve T long enough he makes fantastic dinners. I figure if I document it here, then he can't deny his kitchen skills later ;)
The other night he pan seared chicken breast and made some wild rice to go with it.. and luckily I grabbed a cell phone picture for evidence:
We have some good news to share! The four-wheeler is officially fixed and running! We spent Saturday night with some friends at our family's cabin enjoying the fabulous (humidity-free, bug-free) season of spring! It is so pretty and green out there! Plus there are these super pretty purple flowers (well, probably weeds). We enjoyed a typical camp dinner around the fire (camp dinner= hotdogs, chips, and dip) and discussed the legend of Big Foot. I even learned some astrology. Too fun.
We started Sunday at church like usual. Today was my turn to teach the women's class. They are so fantastic! I love that I leave each lesson learning even more from them then I did in all my preparation. If you ever want to meet some awesome women that have life figured out, you should come with me some afternoon. After church we headed to my parent's for lunch and some run-around ping pong. Its our family's favorite:

Our fabulous Easter didn't stop there! We also got to see T's wonderful mom and spent some time catching up with her. We are so blessed to have (1) such great family and (2) such great family so close to us. Life Is Good.
Oh! I almost forgot to tell ya'll that I found out where I'll do my Rural Care Block this summer. UNMC sends us to a clinic/hospital outside of Lincoln and Omaha for 3 weeks this summer. I found out I am heading to Syracuse, NE right after school ends this May. I am super excited to get out of the classroom and start to apply this knowledge to real people. I can't wait to see what being a physician is like in a smaller town. Being 60 minutes from home is also a nice perk compared to way, way, way out west.
Other than that, we've been dreaming of summer house projects and looking forward to more time together once school settles down in a few weeks. How did you celebrate Easter? Are you also enjoying this fabulous spring weather?
