PASTA E FAGIOLI

ingredients
- 3 slices bacon (or 3oz pancetta!)
- 1/2# ground beef
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery, chopped
- 4 cloves garlice, minced
- 1 t. dried oregano
- 1/4 t. red pepper flakes
- 1 T. anchovy paste
- 1 parmesan rind (or 2-3 oz parmesan)
- 30oz cannellini beans, rinsed
- 28oz dived tomatoes
- 4 c. chicken broth
- 2 c. water
- 1 c. elbow pasta
- salt, pepper, and fresh parmesan cheese to taste

directions
- brown bacon and beef in dutch oven until cooked
- add onion, carrots, and celery until softened
- add garlic, oregano, red pepper flakes, and anchovy paste until fragrant
- add tomatoes, parmesan rind, and beans
- boil then simmer 10 minutes
- add chicken broth, water, and salt
- boil pasta until al dente
- discard parmesan rind
- season with salt and pepper
- enjoy!
