Sweet Potato Casserole

ingredients
- 3lb sweet potatoes, cooked
- 1/2 c. room temperature butter
- 1/4 c. sugar
- 1/4 c. milk
- 1 egg
- 1/2 t. vanilla
- 1/4 t. salt

topping
- 1 1/4 c. cornflakes, crushed
- 1/3 c. chopped pecans
- 1 T. brown sugar
- 1 T. butter, melted
- 1 c. miniature marshmallows

directions
1. Heat oven to 350F and prepare pie pan or other baking dish with non-stick spray
2. Combine potato ingredients and beat for 1-2 minutes on medium-high
3. Add sweet potato mixture to baking dish
4. Combine topping ingredients (except marshmallows) and sprinkle on edges of potato mixture
5. Bake for 20 minutes until topping is golden
6. Add marshmallows to center of dish and bake another 5 minutes or broil until marshmallows are caramelized
7. Serve immediately (unfortunately, as you can imagine, the topping does not reheat well for leftovers)
